Vegan Baked Feta Pasta (TikTok sensation!)

This TikTok pasta sensation is creamy, juicy, and everything you want in comforting pasta! (love your carbohydrates!) It started in Finland by a food blogger and I even heard it’s hard to get feta now because of this viral recipe!

The good news is that you don’t need any cooking skills. So there’s really no excuse here not to try this out. If you can stir you can make the vegan baked feta pasta!

You basically toss the cherry tomatoes in oil, add the block of fet in the center and let your oven do the hard work: baking! The tomatoes are then smothered in their juices and oil and the feta gets melty and creamy. Mix in the cooked pasta, stir, toss and boom your dinner is ready!

However, if you don’t like feta, just swap it with another cheese, how about brie, ricotta, cream cheese, or mozzarella?

Vegan Baked Feta Pasta Recipe

Ingredients

  • 2-3 packs of cherry tomatoes (about 800 gram)
  • 1/4 cup extra virgin olive oil 
  • 1 block / 200-gram vegan feta cheese (if non vegan substitute with regular feta cheese)
  • 300-gram short pasta of choice or more
  • 4 cloves garlic cloves, peel on
  • fresh basil 

Method

  • Preheat the oven to 200°C. In a baking dish, add cherry tomatoes with olive oil and place the feta in the middle. Add the garlic in peel and place it between the tomatoes.
  • Season with salt and pepper and bake for 30 minutes.
  • While the feta and tomatoes are baking, cook the pasta according to the package directions and add a big pinch of salt to the pasta water. Save 2 cups of the pasta water.
  • When the feta and tomatoes are done, remove them from the oven. Stir everything together until it’s creamy and juicy. Remove the garlic peel by squeezing the soft garlic out.
  • Stir in the cooked pasta until well combined and creamy, adding in the pasta water to thin out the sauce. Taste and season with more salt and pepper. Stir in some chopped basil and finish with chili flakes. Enjoy!
